Surprisingly al dente and crunchy to the bite, Mirogallo's Carciofi sott'Olio are peeled by hand to the core, then simply blanched in acidulated salted water and left to marinate in extra virgin olive oil. The pleasant bitterness of the artichoke and the excellent quality of the olive oil will surprise everyone.
