A "harina tortilla" is a Spanish term for a flour tortilla, a soft, thin flatbread made from wheat flour, water, salt, and a fat like lard or shortening.They are a staple in northern Mexico and the U.S. Southwest and are distinct from corn tortillas, which are made from nixtamalized corn flour (masa harina).
